banana chocolate chip protein muffins
- 1 ¼ cup of quick cooking oats
- 1 scoop of chocolate protein powder
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- 3 ripe bananas
- 1 tbsp honey
- 1 tsp vanilla extract
- 1 tbsp olive oil
- 1 egg
- ½ cup nonfat plain greek yogurt
- ½ cup dark chocolate chips
Preheat oven to 350°F.
Process oats in a food processor until they are the consistency of flour. Whisk together dry ingredients.
In a separate bowl, mash bananas. Then add all wet ingredients. Mix together.
Add wet mixture to dry ingredients, mixing well. Fold in chocolate chips.
Scoop batter into muffin tin.
Bake for 20 minutes.
Makes 12 muffins
Recipe Hints
- Use an ice cream scoop to evenly distribute batter
- Use Parchment paper muffin cups for easy removal from the muffin tin or grease and flour your muffin tin to save a tree
- You can make mini muffins easily with this recipe
- You can add a few chocolate chips to the tops of each muffin before baking
