banana nut bread
- 1/2 cup room temperature butter
- 2 cups flour
- 3 mashed bananas
- 2 eggs
- 1 cup sugar less 2 tbsp
- 1 tsp baking soda
- 1/2 cup chopped walnuts
Combine all ingredients. Place in a greased loaf pan and bake at 325°F for 1 hour. Cool for 10 minutes and remove from pan. Cool completely on a cooling rack.
Recipe Hints
- There is no salt in this recipe. You can add 1 tsp salt if you like, but increase the sugar to 1 cup
- Best to use bananas that are over ripe
- Add the walnuts after everything else is well mixed
- You can make one larger loaf (6" X 10" pan) or make three smaller loaves (about 6 1/2" X 4"). If you make the three smaller loaves, cut back on the baking time to 50 minutes
- Sprinkle extra chopped walnuts over the tops of the loaves
- Add some chocolate chips with the walnuts
