banana chocolate chip muffins
- 1/3 cup oil (canola or vegetable)
- 1/2 cup of sugar
- 1 egg
- 1 to 1 1/2 cups of mashed ripe bananas
- 1/2 to 3/4 cup of semi-sweet chocolate chips
- 1 cup all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
Preheat oven to 350°F.
In a mixing bowl, whisk together oil, sugar, and egg. Then stir in the mashed bananas and chocolate chips. Combine flour, baking soda, salt and cinnamon then stir into banana mixture - just enough to moisten. Spoon into 12 greased muffin cups. Sprinkle tops with additional chocolate chips if desired. Bake for 20 to 25 minutes.
Makes 12 muffins
Recipe Hints
- Stir by hand only - using a hand mixer or stand mixer would toughen the mix.
- Use an ice cream scoop to evenly distribute batter
- Use Parchment paper muffin cups for easy removal from the muffin tin or grease and flour your muffin tin to save a tree
- You can make mini muffins easily with this recipe, just reduce the baking time to 15 to 20 minutes
- You can add a few chocolate chips to the tops of each muffin before baking
