carrot cake
- 2 cups flour
- 2 cups sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 3 cups finely shredded carrot
- 1 cup oil
- 4 eggs
- 8 oz. cream cheese
- 1/4 cup butter
- 1 cup icing sugar
- orange food colouring (optional)
- 1 tsp orange juice (optional)
- crushed walnuts (optional)
Preheat oven to 325°F.
In a bowl, combine flour, sugar, bakign powder baking soda and cinnamon. Add carrot, oil and eggs. Beat with an electric mixer until combined.
Pour into a 9 X 13 X 2 greased and floured baking pan. Bake for 50 to 60 minutes until a toothpick inserted near the centre comes out clean. Cool on rack thoroughly.
Cream together the cream cheese, butter, icing sugar and optional ingredients (except for the nuts) and spread evenly on cake Sprinkle with nuts.
