chips
- potatoes
- canola or other flavourless oil
- salt to taste
Using a mandolin or a spiralizer, thinly slice the potatoes. Soak potatoes in cold water for at least 30 minutes. Drain and pat dry. In a deep fryer, set at 400°F, fry potatoes, in batches if necessary, until golden brown. Remove from fryer and shake to remove excess oil. Turn into a large bowl lined with paper towels. Salt immediately.

- Don't peel the potatoes
- Occasionally, for a tasty treat, use lard instead of oil (that's how our Dad/Grandfather used to fry potatoes)
- Goes great with Hamburgers, Chicken Fingers or as a late night snack on their own
