cranberry oatmeal cookies
- 1 cup butter, room temperature
- 1 1/2 cups sugar
- 2 large eggs
- 1 tsp vanilla
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 cups quick-cooking oats
- 1 cup raisins
- 1 cup coarsely chopped fresh or frozen cranberries
- 1 tbsp orange zest
- 10 to 12 ounces white baking chips
Preheat oven to 375°F.
In a large bowl, combine butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each egg. Beat in vanilla.
Combine flour, baking powder, salt and baking soda. Add to the creamed mixture. Stir in the oats, raisins, craberries and orange zest. Stir in baking chips.
Drop by rounded teaspoonfuls 2 inches apart on a greased baking sheet. Bake for 10 to 12 minutes, or until the edges are lightly browned. Cool on wire racks.
Recipe Hints
- You can use an air-bake pan but put a silicon sheet or parchment paper down first.
