dinner buns
- 5 1/4 cups all purpose flour, divided
- 1/4 cup sugar
- 2 tsp salt
- 2 tbsp active dry yeast
- 1 cup water
- 1 cup milk
- 1/2 cup butter
- 1 egg
In a large bowl, mix 2 cups of the flour, sugar, salt and yeast.
In a saucepan, heat water, milk and butter to about 120°F - 130°F. In a small mixing bowl, beat egg. Add a couple of tablespoons of the heated mixture to bring up the temperature of the egg. Add that back to the saucepan and combine.
Add entire contents of the saucepan to the flour mixture. Using a hand mixer, beat at low speed until everything is moistened. Then beat for about three minutes on medium. Add in an additional 2 1/2 cups of flour until dough pulls away from the sides of the bowl.
On a floured surface, knead in the balance of the flour as necessary (up to 1 1/4 cups) until dough is smooth for about 8 to 10 minutes.
Place dough in large greased bowl and cover with tea towel. Let rise in oven (no heat) but with the oven light on, until doubled in size (about 60 minutes).
Punch down dough to remove bubbles. Divide in half.
Three Cheek Buns
We affectionately call these Three Cheek Buns, well, because the baked bun looks like three cheeks! So, here's how you make them. Grease a 12 muffin cup pan. Using half the dough, divide into 12 pieces. Then divide each of those pieces into 3. Shape each piece into a ball, smooth side up. Put three balls into each muffin cup. Cover with a tea towel and let rise for 30 minutes. Bake at 400°F for 14 to 18 minutes.
Dinner Pan Buns
Grease a 13 X 9 pan. Using half the dough, divide into 15 pieces. Shape each piece into a ball, smooth side up. Place balls into grease pan. Cover with a tea towel and let rise for 30 minutes. Bake at 400°F for 16 to 20 minutes.
Recipe Hints
- Use only the amount of flour necessary
- You can brush the tops of the buns with melted butter once out of the oven
- Best to avoid a stand mixer for this recipe
- You can make all Three Cheek Buns or all Dinner Pan Buns if you prefer
- Enjoy with homemade butter
