lukken cookies
These wonderful Belgian cookies are great with your coffee or tea.
- 1 pound of butter – melted
- 3 cups white sugar
- 2 cups brown sugar
- 6 eggs
- 1 tbsp salt
- 1 tbsp vanilla
- ¼ cup apricot brandy, amber rum or whiskey
- 2 pounds of cake and pastry flour (or 6 1/2 cups all purpose flour)
Mix ingredients and cool in refrigerator 3-4 hours or until stiff.
Roll into balls and bake on Belgian Cookie Iron (a Pizzelle Cookie Iron works fine).
Makes 100 or more cookies depending upon size of dough balls.
