pork fried rice
- 1 onion, diced
- 1 tbsp butter
- 1 pork tenderloin, silverskin removed and diced
- 6 to 8 slices of cooked bacon, sliced into small slices (lardons)
- salt and pepper, to taste
- 2 to 3 cups of cooked rice
- 2 tbsp soya sauce
- 2 cups of frozen peas
In a large frying pan, on medium heat, melt butter and saute onions. Add diced tenderloin, continue to saute. Season with salt and pepper. Add bacon, rice, soya sauce and frozen peas. Mix well.
Cover and let sit for at least 10 minutes on medium low heat.
Recipe Hints
- If you want to use long-grain white rice, (pictured above), we suggest Uncle Ben's. We have tried other brands of rice, but they tend to get mushy
- Can be a great main meal or if you cook it without the pork, it can be a great side dish
This recipe was created based on an old family recipe that our Mom/Grandmother created. She never did give us the ingredients list or instructions to make it. So this is our recreation of her recipe, but with our own added twist. We use pork tenderloin instead of the whole bone-in pork chops that she used. Although this a little more work upfront having to remove the silverskin from and chop up the tenderloin, we think it is a far superior way to serve this meal at your family dinner table or to bring to a potluck.
