smothered chicken
- 4 pieces of skinless boneless chicken breast
- 1 tbsp butter
- lemon pepper seasoning to taste
- 1/2 cup sliced mushrooms
- 1/2 cup sliced green peppers
- 1/2 cup sliced red peppers
- 1 cup diced onions
- 1 tsp butter
- 1 1/2 cups grated mozzarella cheese
- paprika (optional)
Preheat oven to 350°F.
In a large frying pan, melt 1 tbsp butter and sprinkle lemon pepper seasoning to taste. Add chicken pieces and sprinkle additional lemon pepper seasoning. Saute until cooked through.
In a medium frying pan, saute mushrooms, peppers and onion in 1 tsp butter.
Transfer cooked chicken to a greased 9 X 13 baking pan. Top chicken pieces with mushroom, peppers and onion mixture. Cover that with a handful of mozzarella. Sprinkle a little paprika over top if desired.
Place in preheated oven for about 10 minutes or until cheese is melted.

- Switch up the veggies - perhaps use cherry tomatoes and zucchini
- Easy to convert to a single meal (pictured to the right)
- You can place the chicken, veggie, cheese mixture under the broiler for a few minutes until the cheese is melted and golden brown instead of just heating in the oven
- Instead of greasing the baking pan, you can put parchment paper to protect the baking dish and make clean up easy
- Cube the chicken prior to sauting it and then stir the cooked veggies and cheese in the baking dish before heating/broiling
