  • 1 tbsp butter
  • 1/2 - 1 medium sized onion diced
  • 1 1/4 cups uncooked long grain rice
  • 3 cups water
  • 1 lb. extra lean ground beef
  • salt and pepper to taste
  • 48 oz. can tomato juice
  • 2 or 3 small bay leaves

Over medium heat, in a large frying pan, melt butter and sweat the onions. Add rice and stir frequently until the rice has become golden brown. Carefully add the water (there will be lots of steam). Place ground beef on top. With a wooden spoon gently break the meat apart until it is spread evenly throughout the entire frying pan. Add salt and pepper to taste. Cook until almost all moisture has been absorbed.

Open the tomato juice can and pour about half of the juice into the frying pan to cover the mixture, being sure to evenly spread the juice around the pan. Add bay leaves. Continue cooking until all the moisture has been absorbed. Continue adding the remainder of the juice and cooking it down, until all the juice has been absorbed. Remove bay leaves before serving.
