apple coffee cake
Batter
- 1 1/3 cups of flour
- 3/4 cup sugar
- 3 tsp baking powder
- 1/4 tsp salt
- 1/4 cup butter
- 1 egg, beaten
- 3/4 cup milk
- 1 tsp vanilla
- 2 cooking apples, peeled and sliced
Topping
- 1/2 cup brown sugar
- 2 tbsp flour
- 1 tsp cinnamon
- 3 tbsp melted butter
Batter Instructions:
Put flour, sugar, baking powder and salt into a large bowl. Mix in butter until crumbly. Make a well in the centre. Add egg and milk, mix until smooth. Add vanilla. Pour into greased 8 X 8 inch pan. Push apples well into the batter, close together.
Topping Instructions:
Mix brown sugar, flour, cinnamon and melted butter together. Sprinkle over batter.
Bake in 350°F oven for 50 to 60 minutes until cake begins to shrink from edge of pan. Serves 9 in large pieces.

- MacIntosh apples are our favourites for this recipe
- You can leave the cake in the pan, but fold up some plastic wrap to stick along the cut edge of this cake to keep it moist until it is all gone
- Serve with a side of homemade vanilla ice cream
