instant pot - shredded chicken breast
- 2 to 4 frozen chicken breasts
- 1 cup chicken stock
- salt and pepper to taste
- any additional seasonings that you prefer
In the Inner Pot, pour in chicken broth. Place frozen chicken breasts. Sprinkle with salt and pepper plus any additional seasonings.
Place pressure lid on Pot and set timer (on Manual or Pressure Cook) for 10 minutes. Once timer buzzes, let pot Natural Pressure Release for at least 10 minutes. Quick release any remaining pressure.
Remove chicken from the Inner Pot. With two forks, shred the chicken pieces.
Recipe Hints
- You can use fresh or frozen chicken - the only difference in the time is that frozen chicken takes longer to come to pressure
- Use the shredded chicken to make Chicken Salad Sandwiches
- Substitute cut up chicken to use in Chicken Veggie Cheesy Pasta
- Once shredded, package in serving portion sizes and store in the freezer for use later
- You can shred the chicken with a hand mixer in a large bowl if you like, but using forks is just as easy and doesn't increase the cost of your electricity
